Guava Buffalo Chicken Wings is a winning recipe born from my love for the predominant flavour of guava in Brazil and my preference for mild heat. Thanks to Jay Beaumont @meatstock, the legend behind the ideas of the videos, who convinced me to share this recipe. He pushed me to overcome my doubts and record my first video (Picanha). Jay, you deserve all the credit for inspiring me to film the chicken wings video, even when I hesitated due to a simple word (worcestershire). Your friendship and patience are truly appreciated.     The heat beads have chemicals on them. should burn them first. mate did it that way and could only taste chemicals.

    I love your video, but where did you find the great that holds the fire starter that’s kind of got a inverted dent and all you do a slide the trays over the top instead of having to use a tower? You put the fire starter into those grooves and then slid the trays over. I can’t find that bottom great anywhere could you help me ?

    Holy shit there's a society for us jumbuck souva lovers!!! OMG. I have one of the earliest Zealots, he bought one back in the 2000's, when it was decent amount of steel and no bullshit coatings. Still have, we use it every year for camping when the boys meet up! I'll make a video and show you, its like the OG Jedi version before star wars went all tranny and women and shit. OMG!

    Great video clear and precise, my Dad was awesome at Weber Kettle cooking and taught me when he was too old and frail to do them anymore. I carried the tradition on for the family but after Mum & Dad passed I haven't done one for many years. This video brought back a lot of wonderful memories and reminded me of important things I had forgotten with cooking on the Weber too. Thank you very much for sharing and there is nothing as good as a heat bead weber cook up. Cheers. Oh and when I did roast Lamb Chicken and Pork I used to put a few cups of marsala with water in the drip tray too. THAT was tasty as the flavor infused in to the meat and helped make it tender and juicy too!

    The Weber was not brought up to a high temperature before putting the meat on to cook. I thought that an initial high temperature was necessary to get a good crackling.

    That last tip gest a massive thumbs up. I've wasted so much time looking at the thermostat waiting for the temp to come up. All I'm doing is waiting for water to evaporate. Temp first then water 👍

    Interesting, I have never seen lamb gyros before in Greece, we generally have pork or chicken. Is this recipe Turkish ? Can you do pork or chicken also ?

      Depend on the weight of the meat. It looks like 1 to 1.5 kgs of lump wood to 1 kg of meat . Than add more as u go.
